All our beef comes from grass fed naturally reared stock, aged for a minimum of 30 days
Rubia Gallega is a breed of cattle indigenous to Galicia. This beef is produced exclusively from this breed. The beef graze on the meadows of Galicia for up to 18 years (up to 15 years longer than your normal) During this time the marbling matures, ultimately giving the beef a distinctly deep flavour. This gives the beef an extraordinary flavour, an intense beefy-ness and succulence brought about by the high marbling of the meat. The consensus used to be that old means tough, but this beef is dry aged for a minimum of 50 days which not only further intensifies the flavour but also tenderises the meat.
CARNE DE MORUCHA DE SALAMANCA
Aberdeen Angus traditionally pastured between the meadows of Salamanca and the mountains of Leon. The herbs and plants found in the mountains and in the meadows where animals graze freely give this beef its characteristic taste and texture. This highly valued meat is bright pink to red in colour and has very fine muscle fibres with evenly distributed fat. All this contributes to this meat being juicy and tender with a distinctive taste and flavour
Ayrshire retired dairy cow from Finland. A continuous Gold Award Winner at the World Steak Challenge. These cows enjoy a 5 year period of retirement on grass, where they produce no dairy at all and simple put on fat slowly and naturally. A big depth of flavour.
All of our dishes are made from finest fresh ingredients sourced daily. Inspired by and adapted from some of the world’s finest Argentinian recipes, we work with many ingredients sourced daily. As an independent, Pulperia has the great luxury of being able to change our menu frequently due to demand or new quality ingredients from our suppliers; so some new dishes may be available on the day while some other dishes may also be unavailable.
Website menus are subject to change due to customer demand, so if you specifically like something from the menu please ask for availability when making your reservation. From time to time, the demand for a popular dish may result in us selling out, and in this instance, an alternative dish may be offered. We will always try and accommodate customers needs where possible.
All Items are subject to availability. Dishes may contain nuts, or nut derivatives. Fish dishes may contain small bones. Olives may contain stones. All of our food is freshly prepared and cooked to order. If you have allergies, please inform a member of staff, who will be able to advise on all the ingredients used. Please note that we may not be able to cater for every combination of dietary restrictions due to the nature of the cuisine we serve. We will not be able to cater for the following allergens; tomato, onion and garlic as these ingredients are key components in many of our dishes.
